The market volume for fresh or chilled spinach in Germany showed considerable movement between 2018 and 2023. It grew from 80 150 tons in 2018 to a peak of 106 843 tons in 2021, a period marked by particularly strong increases of 17% in 2020 and 12% in 2021. This upward trend reversed sharply from 2022, with the market contracting by 23% to 82 688 tons that year and by a further 21% to 65 407 tons in 2023.

In 2024, sector reports pointed to specific developments affecting the spinach landscape. Unfavorable spring weather conditions in Germany and neighboring countries hampered harvests and led to reduced production volumes. Concurrently, consumer preferences continued to shift towards fresh spinach and convenience products, evidenced by growing demand for items like chilled fresh pasta containing spinach and the emergence of new segments such as gourmet filled pasta.

Spinach production in Germany rose for the second year in a row. In 2020, the country produced 83 470 tonnes of spinach, a 22.7% increase compared to the previous year. Over the 2017-2020 period, production grew by 13.1%, with an average annual growth rate of 4.2%. The lowest production level was in 2018, at 66 200 tonnes, which also saw the largest decline of 10.3%.

In 2020, Germany exported 4 317 tonnes of spinach, a significant drop of 10.6% year-over-year. From 2017 to 2020, exports fell by 50.5%, with an average annual decline of 20.9%. The smallest export volume was in 2018, at 3 336 tonnes, which experienced the steepest decrease of 61.8%. In contrast, 2019 saw the largest increase, with exports rising by 44.7%.

The lowest value was in 2018, at 2 555 thousand US dollars, which saw the biggest decline of 30.5%. The largest increase occurred in 2019, with a 34.9% rise.
