In value terms, the market reached its peak earlier at 327.4 million US dollars in 2020, followed by a steady decline to 226.8 million US dollars by 2023, reflecting shifting price levels and consumption patterns.

Domestic production increased significantly over this period, more than doubling from 568 tonnes to 995 tonnes, though it remained a minor component of a market overwhelmingly supplied by imports. The latter originated primarily from the United States, Spain, Italy, and Turkey.

A notable evolution in the market structure became apparent by 2023, characterized by the entry of new organic and premium product segments. This shift was driven by heightened French consumer preference for almonds from organic farming, with a strong focus on traceability, sustainability, and nutritional quality. This demand spurred the introduction of new brands and a wider variety of packaging formats, catering to both professional use in pastry and catering and retail consumers seeking natural, additive-free options.
