In 2018, the Syrian sesame oil market reached 3 778 t, supported by the presence of a major domestic vegetable oil producer in Hama that included sesame oil in its output and the entry of a new Russian supplier into the broader vegetable oils sector. The market volume then began a gradual decline, slipping to 3 505 t by 2020, a year in which the key domestic company reported substantial gross profits, indicating continued operational activity despite the shrinking market size.
A sharper contraction occurred from 2021, driven by steep price increases for vegetable oils stemming from a market structure with only five processing plants and a monopoly on oil imports held by just two individuals. This led to product scarcity and altered consumer behavior due to high costs, pushing the market volume down to 3 397 t in 2021 and further to 2 938 t by 2023, a period still characterized by heavy reliance on imports and concentrated control over sunflower oil supplies.
By 2024, a government-supported sesame oil processing project was initiated, highlighted as profitable due to rising demand and with a focus on workforce employment, representing a potential development for future domestic production capacity.

Syrian sesame oil and fractions production rebounded after two years of decline. In 2020, Syria produced 3,700 tonnes, marking a modest 2.8% increase from 2019. Over the 2017-2020 period, production fell by 11.9%, with a compound annual growth rate of -4.1%. The lowest output was recorded in 2019 at 3,600 tonnes, while the sharpest drop occurred in 2018 with a 9.5% decrease.
