From 2018 to 2020, the market volume for salted, in brine, dried or smoked beef in Oceania showed fluctuations. It declined from 395.2 thousand tonnes in 2018 to 379.1 thousand tonnes in 2019, then recovered to 419.3 thousand tonnes in 2020.

By 2023, the cattle herd reached its highest level in a decade, and the announcement of an El Nino event led to increased slaughter rates, supporting production growth and driving the market volume up to 449.1 thousand tonnes.

In 2024, new licensing rules required export facilities to implement digital tracking systems for livestock movements. Increased female cattle slaughter and the growing use of grain-fed finishing in feedlots also influenced supply dynamics.
