The Egyptian market for salted, dried, or smoked beef displayed marked volatility between 2018 and 2023. After an initial increase to 189 tons in 2019, volume fell sharply to 147 tons in 2020 before surging to a peak of 207 tons in 2021. The following two years saw a gradual contraction back to 166 tons.

This volatility was closely tied to irregular import flows. In 2019 and 2021, imports added 32 tons and 53 tons respectively to the market, accounting for the major upticks. In contrast, years with negligible imports, such as 2020 and 2022-2023, saw market size align closely with domestic production.

Domestic production showed modest growth over the period, rising from a low of 148 tons in 2020 to 172 tons in 2022, before a slight dip to 166 tons in 2023. With exports remaining minimal throughout, the market's dynamics were predominantly shaped by the interplay between steady local output and occasional import spikes.
