Earlier Report Observations

The market for salted, brined, dried or smoked pork in Italy contracted sharply from 899 thousand tons in 2018 to 647 thousand tons in 2019, then stabilized around 641 thousand tons in 2020. During this period, Italy maintained its leading role in the global processed meat market, with Germany as its key export destination for these products.

Market volume recovered to 756 thousand tons in 2022, supported by stable consumer demand for processed pork products. This growth occurred despite rising industrial and raw material costs that began in 2022, and the outbreak of African swine fever, which disrupted export flows to third countries.

From 2023, the market entered a new phase of decline, falling to 580 thousand tons in 2023 and 430 thousand tons in 2024. The increase in exports of processed pork in 2023 contributed to reduced domestic availability, while production costs remained elevated.
