From 2018 to 2020, the rye market in Eastern Europe saw a notable expansion, with market volume growing from 4.5 million tons to 5.9 million tons. This growth was primarily fueled by increased profitability for rye producers in 2020, which encouraged higher output and lifted production to 7.2 million tons. Earlier years were marked by a long-term decline in sown areas and weakening demand for rye and rye bread, which kept production in check but did not prevent the market from growing as exports remained high.

The market contracted sharply in 2021 to 4.6 million tons as sown areas continued to shrink and yields dropped, reducing production. A rebound to 5.2 million tons occurred in 2022 despite further reductions in rye acreage, largely because exports fell by nearly half, making more grain available domestically. By 2023, sown areas had hit a historic low after a 10% reduction, internal consumption kept declining, and production fell to 5.5 million tons, pulling the market volume down to 4.7 million tons.

In 2024, the downward trend in sown areas persisted, with plantings shrinking to about 0.8 million hectares and harvests reaching record lows. This tightening supply led to a significant rise in rye and rye flour prices. At the same time, the market saw structural shifts, including an 8–10% annual growth in the organic rye segment driven by demand for gluten‑free products and stricter quality standards for grain.
