The French market for prepared pork was initially influenced by global events, such as the African swine fever outbreak in China during 2018-2019, which tightened worldwide supplies and raised prices, supporting market value growth. Market volume, however, saw only modest increases until the COVID-19 pandemic in 2020 forced temporary closures of processing plants and reduced household consumption, leading to an 18% drop in volume to 26 854 t.

After the pandemic, market volume partially recovered in 2021, aided by a rebound in out-of-home dining, a significant sales channel for pork. From March 1, 2022, new regulations made origin labeling mandatory for pork served in restaurants and suspended imports of meat from animals treated with growth-promoting antimicrobials. European pork production also declined due to the energy crisis and the war in Ukraine, contributing to price increases. By 2023, pork consumption in France continued to decrease in volume, falling to 26 189 t, while market value rose to 203.8 million US dollars, driven by inflation.
