From 2018, production of prepared or preserved beef in Bolivia entered a steady growth phase, supported by the opening of the Chinese market for beef exports. This development, implemented in August 2019, spurred investments in genetics, animal health, and processing infrastructure, boosting both raw material supply and processing capacity. By 2020, the cattle herd had grown by 3.7%, surpassing 10 million head, ensuring greater meat availability for preservation and preparation.

The expansion continued with the launch in 2021 of the state-led Program for the Development of Cattle Farming for Small Producers, which allocated substantial funding to increase production and productivity. In 2023, production of prepared beef reached a record 27 000 t, with market volume hitting 25 451 t. This was underpinned by historic raw beef production of 244 019 t and rising export demand, particularly from China and Russia. Exports of prepared beef grew by 38% in volume, reflecting successful market consolidation and effective state support for the industry.
