The Austrian market for prepared or preserved beef and offal expanded to 9 578 t in 2019, following the implementation of new EU carcass classification schemes in July 2018, which standardized trading conditions for meat. This growth was interrupted in 2020 when the market volume fell to 9 024 t.

Market volume recovered to 9 206 t in 2021, supported by a substantial domestic beef production base of around 213 900 t that year. Activity in the slaughter and meat processing sector, which generated approximately €5.08 billion in revenue in 2022, helped sustain the market, which reached 9 285 t. However, by 2023, a shift in consumer preferences became apparent, with pork production declining and poultry consumption rising, which contributed to a slight decrease in the prepared beef market to 9 056 t.

In 2024, key developments included a high beef self-sufficiency rate of 148%, although cattle herds and slaughter numbers declined. Producer prices for beef increased by up to 35% due to rising production costs for feed and energy, while overall per capita meat consumption saw a minor increase, aided by a record level of tourism in the country.
