This growth was primarily fueled by a sustained increase in domestic production, particularly of chicken, which climbed by over 19% across the period. Concurrently, consumer preferences shifted towards poultry, as evidenced by rising consumption even as total meat intake declined.

The market accelerated in 2018 and 2019, supported by a broader trend where poultry's share of total meat production rose significantly, increasing from 2.5% to 26% over time. Production jumped by 9% in 2021, pushing market volume above 230 thousand tonnes. After a slight contraction in 2022, growth resumed in 2023 with a 2% production increase and continued consumer favor for poultry over red meats.

Updated data revealing a higher edible yield for poultry further supported market assessments, indicating that available supply was greater than previously estimated. This structural insight, along with the ongoing preference shift, underpinned the market's resilience and expansion throughout the period.

After two years of growth, Norway's poultry meat and offal exports declined in 2021. That year, exports totaled 1 371 t, showing a significant drop of 23.3% from the previous year. Between 2018 and 2021, exports overall increased by 52.4%, equivalent to an annualized rate of 15.1%. The peak was recorded in 2020 at 1 787 t, with the largest year-on-year increase of 53.3% also occurring in 2020.

From 2018 to 2021, the largest buyers of Norwegian poultry meat and offal were Denmark, accounting for 67.6% of exports in kind, followed by Spain at 9.3%, and Hong Kong at 7.8%. Together, these three destinations made up 84.7% of total exports in kind.
