From 2018 to 2019, Indonesia's fresh potato market volume grew from 1 319 thousand tons to 1 354 thousand tons. This expansion was supported by a 30 thousand ton rise in domestic production and sustained demand from a growing middle class with a preference for processed potato products. In 2020, the market contracted back to 1 319 thousand tons as the COVID-19 pandemic caused supply chain disruptions and reduced sales in the foodservice sector, particularly for french fries in major quick-service restaurants.

The market recovered strongly in 2021, reaching 1 410 thousand tons, as production resumed its growth. A significant surge followed in 2022, with the market volume peaking at 1 576 thousand tons. This was driven by a 10.5% increase in production to 1.5 million tons and a concurrent 19.13% drop in exports, which made more potatoes available domestically. However, in 2023, the market volume fell sharply to 1 329 thousand tons after potato production declined by 16.99%, influenced by ongoing logistical constraints linked to the pandemic.
