The pig offal market in French Polynesia expanded consistently between 2018 and 2022, with total volume rising from 62 507 kg to 73 120 kg. This growth was accompanied by a significant increase in imports, which peaked at 16 960 kg in 2022, while domestic production showed moderate fluctuations.

In August 2022, a fire at the Charcuterie du Pacifique severely reduced local processed meat supply. To address the shortage, the government authorized exceptional imports of 75 tonnes of pork for Salaison de Tahiti, which drove the sharp rise in pig offal imports that year. By 2023, imports fell to zero and the market volume contracted to 54 070 kg.
