From 2018 to 2020, the pig offal market in North Macedonia experienced fluctuations, with volume reaching 2 592 t in 2020 after a slight dip the previous year. During this period, the Food and Veterinary Agency strengthened controls on domestic production and trade, while the country initiated procedures to obtain permission to export fresh pork to the European Union. The planned cessation of vaccination against classical swine fever in 2020, a prerequisite for EU export, likely encouraged higher domestic production, which contributed to the market's growth that year.

The market contracted sharply to 1 968 t in 2021, pressured by global and domestic challenges that reduced consumption ahead of Easter holidays and strained local farmers and the meat industry. In 2022, the government's decision to freeze prices of basic foodstuffs, including fresh meat, may have dampened production incentives, leading to a further decline in market volume to 1 782 t, even as authorities launched a tender to purchase meat worth 40 thousand euros to stabilize supply.

In 2023, the market recovered slightly to 1 911 t, driven primarily by increased imports, while domestic production continued to fall.

The lowest value was recorded in 2018 at 1 614 thousand US dollars, reflecting a 3.4% decline. The largest increase occurred in 2019 with a 9.5% rise. Between 2017 and 2020, production value increased by 15.4%, translating to an annualized growth rate of 4.9%.
