Following two years of contraction, Peru's pastry production rebounded. In 2020, the country produced 89 549 tonnes of pastry, marking a solid 16.6% increase compared to 2019. Over the 2017-2020 period, production grew by 12.4%, with a compound annual growth rate of 4.0%. The lowest production level was recorded in 2019 at 76 786 tonnes, which saw the largest decline of 2.1%.

Following two years of growth, Peru's pastry exports declined. In 2020, exports totaled 21 059 tonnes, showing a modest 7.3% decrease from the previous year. From 2017 to 2020, Colombia (25.0% of exports in volume), Chile (11.2%), and Nicaragua (10.7%) were the largest buyers of Peruvian pastry, though they did not dominate the market.
