The Greek pastry market volume expanded from 47 377 t in 2018 to 50 806 t in 2020, driven by regulatory changes that allowed mass catering businesses to produce and distribute pastry products, broadening market access. The entry of SwitzGroup through its acquisition of Kriton Artos intensified competition, while the 2020 opening of BakeHellas's fully automated frozen pastry plant in Schimatari significantly increased domestic production capacity.

After 2020, market volume contracted, falling to 49 756 t in 2021 and sharply to 43 143 t in 2022. New product segments emerged, such as Holy Llama's vegan pastries in 2022, and EU organic labeling rules began affecting product requirements in 2021. However, the most pronounced decline occurred in 2023, with volume dropping 24.9% to 32 395 t, primarily due to rising energy and raw material costs that pushed up consumer prices and reduced demand.

In 2024, Barilla Hellas reported increased turnover from pastry categories, indicating a renewed focus on this segment. Throughout the period, production fluctuated between 29 177 t and 32 666 t, while imports grew steadily, and exports surged from 30 646 t in 2018 to 68 472 t in 2024.
