Groundnut production in Mexico fluctuated during the period, with a notable drop in 2019 to 81.4 thousand tons followed by a recovery to over 100 thousand tons in 2020-2021. Consumer trends evolved toward premium and innovative products. By 2024, coated peanuts and snacks with exotic flavors gained popularity, driving innovation with sea salt, roasted spices, and cold-pressed oils. In 2025, studies by the Federal Consumer Protection Agency (Profeco) emphasized clear labeling and vacuum-packed freshness, reflecting a demand for trustworthy, high-quality groundnuts. These factors underscored a broader shift in consumption patterns toward health-conscious and reliable snack options.
