After 2020, the market volume contracted, falling to 237.8 thousand tons in 2023. During this period, production methods shifted significantly, with a 3.7% increase in free-range laying hens compared to 2022 and a 25.5% reduction in caged farming between 2019 and 2024. The pasteurized egg products segment also grew rapidly, expanding by 40%.

In 2024, the market rebounded sharply to 387.9 thousand tons. This recovery was driven by a resurgence in demand, reflected in a 25% increase in EU egg prices between August and December 2024. New EU labeling rules, effective from November 8, 2024, required stamping information exclusively at the production site, while outbreaks of avian influenza affected European supply chains.
