Industry consolidation, notably Vilvi Group's acquisition of the Latvian dairy producer SIA Baltic Dairy Board in 2022-2023, enhanced production capabilities and contributed to the output increase by 2024. Simultaneously, a 25% year-on-year rise in milk prices in 2023 elevated production costs, which drove up the market value in monetary terms, reaching 24 433 thousand US dollars in 2024.

Consumer preferences gradually shifted towards artisanal, organic, and natural cheese varieties, fostering sustained demand for cheese products. A surge in processed cheese exports in 2021 reduced the volume available domestically, leading to a temporary market contraction that year before recovery resumed.
