Between 2018 and 2020, the German market for fresh or chilled mushrooms and truffles grew from 154 004 t to 161 951 t. This expansion was fueled by a rising consumer preference for regional and fresh mushrooms, a trend that continued in 2019 and led to supply chain pressures as some farms could not fully harvest. However, in 2022, volume contracted to 149 086 t, coinciding with lower import levels. A recovery occurred in 2023, with volume rising to 157 353 t, driven by the growing popularity of new product segments such as truffle oils and sauces, which diversified demand. Weather-related truffle scarcity in late 2022 also influenced market dynamics.

In 2024, import volumes for varieties like chanterelles and porcini mushrooms remained significant, highlighting the ongoing dependence on foreign supply. The lack of specific marketing standards for wild mushrooms continued to allow flexible trade practices under general EU regulations.
