A sharp contraction occurred in 2021, with market volume falling to 330 thousand tons as production dropped to 364 thousand tons. From 2022, the market began a gradual recovery, with production reaching 387 thousand tons by 2023. This rebound aligned with significant research activity in Peru focused on optimizing molasses for new industrial applications, including its use as a feedstock for bioethanol production and for manufacturing biodegradable biopolymers, which helped stimulate demand.
