The Mexican molasses market volume experienced significant fluctuations from 2018 to 2021. It grew to 2.2 million tons in 2019, supported by stable world sugar prices which encouraged sugar production and its by-products. However, volume dropped sharply to 1.8 million tons in 2020. A recovery to 2.1 million tons followed in 2021, driven by increased global sugar and molasses output and a shift in consumer preference towards products containing molasses, such as brown sugar.

In the following years, the market volume showed modest adjustments. It saw a slight decline to 2.0 million tons in 2022, a period marked by government policies supporting sugar exports and imports, alongside sugarcane imports that secured raw material supply. By 2023, volume decreased further to 2.0 million tons, primarily due to persistent geological, financial, and administrative constraints limiting the operational capacity of the National Refining System, which affected the output of derivatives including molasses.
