From 2018 to 2021, rice production in Central America grew from 1 944 thousand tons to 2 357 thousand tons, peaking at 2 407 thousand tons in 2020. Market volume followed a similar trend, rising from 2 226 thousand tons in 2018 to 2 544 thousand tons in 2021, with a high of 2 609 thousand tons reached in 2020.

In 2022, the government implemented the 'Ruta del Arroz' market liberalization policy, which eliminated price controls and cut import tariffs on rice from 35% to 4–5%. This policy spurred imports, which increased to 246 thousand tons in 2022 and further to 296 thousand tons in 2023, helping lift total market volume to 2 672 thousand tons in 2022 before it stabilized at 2 662 thousand tons in 2023. Domestic production remained resilient at 2 431 thousand tons in 2022 before a modest dip to 2 395 thousand tons in 2023.

The liberalization measures continued into 2024, driving imports up to 400 thousand tons. Contrary to the expected price reduction, consumer rice prices accumulated an 8.2% increase between August 2022 and May 2024, while the market volume trend from previous years indicated sustained supply through imports.

Central America's production of milled rice and broken rice has increased for the second year in a row. In 2020, the region produced 2 407 K t, marking a significant 22.1% rise from the previous year.
