The market for milk and cream in Slovenia contracted from 544 thousand tonnes in 2018 to 510 thousand tonnes in 2020. This initial decrease coincided with lower raw milk collection in 2018, which reduced the available supply for fresh milk and cream production. The market volume showed minimal change in 2020, indicating a period of stabilization.

From 2021 to 2023, the market continued to decline, reaching 479 thousand tonnes. A key driver was a strategic shift by Slovenian dairies toward higher-value fermented dairy products, such as yogurt and cheese. In 2022, cream production fell to its lowest level in over two decades, while exports of cream increased substantially. In 2023, milk collection decreased by 2.8%, reinforcing the trend of diverting milk away from fresh liquid milk and cream output.

In 2024, although full market size data is not available, trade flows and production patterns shifted significantly. Imports of milk rose by 26%, and cream production increased by over 6%. Concurrently, evolving consumer preferences boosted demand for healthier options, including low-fat, no-added-sugar, and lactose-free dairy products, leading to new product innovations under national quality schemes.

Following two consecutive years of decline, milk and cream production in Slovenia saw an upturn. In 2020, Slovenia produced 769 K t of milk and cream, marking a modest increase of 1.3% compared to the previous year.
