Maize starch production in Ukraine began the period at 747 thousand tons in 2018, boosted by a record corn harvest that provided abundant raw material. Output remained stable near 750 thousand tons through 2020, a period marked by industry preparations for new capacity, including the anticipated launch of a major processing plant in Yahotyn, signaling increased investment in the sector.

A sharp rise in demand for corn processing products, both domestically and for export, propelled production to 1 025 thousand tons in 2021. This growth was abruptly interrupted in 2022 when the war and the blockade of seaports severely disrupted supply chains and logistics, causing output to plummet to 536 thousand tons.

The downturn continued into 2023, with production declining further to 432 thousand tons, reflecting the market's ongoing adaptation to the challenging conditions caused by the conflict.

Following two years of growth, maize starch production in Ukraine experienced a decline. In 2020, Ukraine produced 745.5 K t of maize starch, marking a slight decrease of 1.0% compared to 2019. In 2020, Ukraine exported 74 433 t of maize starch, showing a controlled decline of 10.0% compared to 2019. Between 2017 and 2020, exports increased by 21.7%, equivalent to an annualized rate of 6.8%. From 2017 to 2020, Indonesia, the United Arab Emirates, and Saudi Arabia were consistently the main destinations for Ukraine's maize starch exports in kind, accounting for 34.0%, 16.0%, and 11.6% of exports, respectively. Together, they represented 61.6% of total export flows.
