From 2018 to 2019, the Portuguese liquid egg market remained stable at around 4 500 t, supported by growing consumer demand for free-range and organic eggs, as well as EU regulations strengthening safety and traceability. The COVID-19 pandemic in 2020 led to a drop in market volume to 3 661 t due to supply chain disruptions and operational constraints, despite temporary support measures for the poultry sector. In 2021, the market recovered to 4 209 t following the introduction of a zero VAT rate on chicken eggs, which reduced the tax burden and stimulated demand.

The market surged in 2022, reaching 6 315 t, and then to 9 237 t in 2023. This growth was driven by a combination of factors: national production capacity reached 104%, limiting exports and directing more output to the domestic market, while the temporary zero VAT rate, extended until January 2024, continued to boost consumption. Simultaneously, avian influenza outbreaks and rising feed costs created a raw material shortage, leading to price increases and higher imports to meet demand.

Portugal's liquid egg production declined for the third consecutive year. In 2021, the country produced 5 782 tonnes of liquid eggs, showing little change from the previous year. Between 2018 and 2021, production decreased by 2.7%, which translates to an annualized rate of 0.9%.

Liquid egg production in Portugal increased for the second consecutive year. In 2021, the output was valued at 9 063 thousand US dollars, reflecting a slight advance of 1.9% compared to the previous year. Between 2018 and 2021, production decreased by 9.7%, equating to an annualized rate of 3.3%. The minimum value was recorded in 2019 at 8 633 thousand US dollars. The largest decline occurred in 2019, at 14.0%, while the largest increase was in 2020, at 3.1%.

In 2021, liquid egg deliveries from Portugal amounted to 9 168 tonnes, up by 22.9% from the previous year. Between 2018 and 2021, exports decreased by 19.5%, with an annualized rate of 7.0%. The minimum value was recorded in 2020 at 7 458 tonnes, while the maximum was in 2019 at 11 428 tonnes. The largest decline occurred in 2020, at 34.7%.

After a two-year drop, Portugal's liquid egg exports increased. In 2021, the country exported 14 369 thousand US dollars of liquid eggs, up by 25.9% compared to the previous year. Over the period 2018 to 2021, exports decreased by 25.3%, with a compound annual growth rate of 9.3%. The minimum value was recorded in 2020 at 11 417 thousand US dollars, and the largest decline occurred in that same year, at 31.7%.
