The market for lard and poultry fats in Honduras expanded from 3 011 t in 2018 to a peak of 4 754 t in 2020, driven largely by a surge in imports. This growth coincided with substantial investments in pig farming, which increased meat output and likely boosted by-product fat production. Mandatory sanitary regulations for the poultry sector introduced by SENASA in 2018 also began shaping production standards during this period.

After 2020, market volume contracted to 3 312 t by 2022. A decline in demand for poultry meat in 2020 reduced pressure on domestic fat production, while subsequent industry efforts focused on raising national output. New SENASA biosecurity rules for poultry farms in 2022, alongside a broader industry shift toward leaner pork production that deliberately reduced fat content, further constrained supply.

By 2023, the market stabilized at 3 338 t as domestic fat production rose to 931 t. This recovery was supported by the promotion of pork processing and the implementation of the National Traceability System (SINART), which aimed to cut imports and lift the share of home-produced meat to 35%. Concurrent campaigns for responsible front-of-pack nutritional labeling began informing consumers about fat content in foods.
