The Australian honey market saw significant volatility in its physical volume between 2018 and 2023, with the market size falling to 13 330 t in 2019 before rebounding sharply to a peak of 16 225 t in 2020. This was followed by a contraction in subsequent years, with the market settling at 15 584 t in 2023. In value terms, the market value showed a clear declining trend, contracting from 125.6 mln USD in 2018 to 96.2 mln USD in 2023.

This dynamic was driven by a steady decline in domestic honey production, which fell from 12 419 t to 11 358 t over the period. Concurrently, honey imports experienced a sharp drop in 2019 but then surged and remained elevated, reaching 8 821 t in 2023. Export volumes grew steadily until 2022 before receding in 2023, which increased the net volume of honey available on the domestic market.
