Between 2018 and 2024, the Slovak gingerbread market saw substantial growth, with volume increasing from 2,519 tonnes to 3,834 tonnes. Market value more than doubled from $7.3 million to $16.8 million over the same period. This expansion was primarily driven by a shift in consumer preferences toward healthier, plant-based, and organic food options, which elevated demand for gingerbread and similar products perceived as natural or traditional.

The rising demand was largely met by a significant increase in imports, which peaked in 2021-2022 before moderating. Local production also grew moderately across the years. By 2024, the entry of new retail chains and foreign competitors into the Slovak market enhanced product availability and intensified competition, further supporting market volume growth.

New consumer protection legislation, effective from July 2024, introduced stricter labeling rules and higher transparency requirements for food products. While these regulatory adjustments changed market conditions, the underlying demand trends, supported by continued interest in plant-based alternatives, kept the market on an upward trajectory.

In 2019, exports surged by 152.6%, and by 2020, foreign gingerbread supplies from Slovakia reached 451 tonnes, showing a moderate 7.9% increase over the previous year. The span from 2018 to 2020 exhibited a peak-to-trough amplitude of 2.7 times.

From 2017 to 2020, Hungary, Austria, and Poland remained the top buyers of gingerbread from Slovakia, accounting for 87.0% of total exports in kind. Hungary led with 45.6%, followed by Austria at 30.1%, and Poland at 11.4%.

The market showed signs of volatility during the observed period. The minimum value was recorded in 2018 at 431 thousand US dollars, which also experienced the largest decline of 23.3%. In 2019, exports jumped by 462.2%, and by 2020, Slovakia's gingerbread export volume amounted to 3 056 thousand US dollars, showing an abrupt 26.2% gain compared to the previous year. The variation between the maximum in 2020 and the minimum in 2018 amounted to a 7.1-fold difference.
