The Finnish market for gingerbread, biscuits, waffles and wafers displayed considerable volatility in volume between 2018 and 2024. Consumption measured in tonnes fell sharply from 25.1 thousand tonnes in 2018 to 20.4 thousand tonnes in 2019, then rebounded to a peak of 26.9 thousand tonnes in 2022. The following two years saw a slight correction, with volumes settling at 25.8 thousand tonnes in 2024. In value terms, the market followed a different trajectory: after a modest decline from 106.5 million dollars in 2018 to 101.8 million dollars in 2020, it entered a phase of robust growth, reaching 140.7 million dollars in 2023 before stabilizing in 2024.

Domestic production volumes remained relatively stable through most of the period, ranging from 9.7 to 11.6 thousand tonnes, while imports fluctuated more significantly, dipping to 10.7 thousand tonnes in 2019 before recovering to over 17 thousand tonnes in 2022. The interplay between production and imports, coupled with minimal exports, drove the overall market size movements. The divergence between physical volume and market value after 2021 suggests an increase in average prices or a shift toward higher-value product segments within the category.
