After peaking in 2022, market volume contracted by 8% in 2023, settling at 3 638 thousand tonnes. This decline coincided with a drop in domestic production and reduced imports. During this period, the market saw a rising trend towards organic and natural ginger products, with over 28% of new product launches in 2023-2024 containing ginger. Additionally, the introduction of new production lines, such as SA Rawther Spices' organic ginger powder line, aimed to capture growing export demand.

Throughout the full period, Asia maintained its position as the dominant ginger producer, accounting for around 80% of global output. Production increases in countries like India and others offset temporary setbacks in China, where output fell due to reduced cultivation area and yield losses in 2021.
