Between 2018 and 2020, the Slovak fresh beef market experienced volatility. A continued decline in cattle slaughter rates constrained domestic production during 2018-2019, coinciding with a noted consumer shift toward more frequently purchased poultry meat, which contributed to a contraction in beef consumption. The market recovered in 2020, however, as growing consumer interest in premium products like aged beef, steaks, and hamburgers stimulated demand.

The market entered a phase of sustained growth from 2021 onward. An increase in per capita beef consumption provided a fundamental driver for expansion in 2021. The following year, despite global energy price surges and supply chain disruptions stemming from the war in Ukraine which raised production costs, demand remained resilient. This was partly supported by a broader EU-wide consumer trend favoring certified meat with guaranteed origin and quality.

Growth accelerated markedly in 2023 and 2024. Improved profitability for meat processors in the preceding period supported supply-side activity. A significant market expansion to over 19,000 t in 2024 was facilitated by the stabilization of energy costs and the easing of global supply chain pressures, which made beef more accessible and supported both domestic output and import volumes.

Production fresh or chilled beef in Slovakia

In 2020, Slovakia's fresh or chilled beef production reached a value of 21 474 thousand US dollars, marking a significant 29.6% increase from the previous year. Slovakia's exports of fresh or chilled beef declined for the second year in a row. In 2020, export volume fell to 766 tonnes, a sharp 53.9% decrease from 2019.
