This growth was propelled by substantial investments into dairy processing, including the launch of a new workshop for curd cheeses and feta in September 2017, which raised production capacity by 30%. The active development of whey processing enhanced the segment's investment appeal and economic accessibility of cheese. Furthermore, an 11% increase in cheese consumption in 2021 provided additional stimulus for output.

Market volume contracted to 684 тыс. т in 2022, influenced by a 6% drop in curd sales and a 24% surge in consumer prices due to sanctions and logistical disruptions. However, a recovery followed in 2023, with the market reaching 699 тыс. т. This rebound was supported by a 12.4% rise in cheese consumption in the first half of the year and ongoing expansion by major producers, who also benefited from tighter controls on cheese products with milk fat substitutes.

In 2024, the market volume grew further to 756 тыс. т, while production increased to 682 тыс. т. Preliminary data for 5 indicates a modest decrease in production to 666 тыс. т.

Production fresh cheese and curd in Russia

Russia's production of fresh cheese and curd has grown for the second year in a row. In 2021, output reached 635.8 thousand tonnes, marking a 9.4% increase from 2020. Looking at the period from 2018 to 2021, production rose by 12.5%, with an average annual growth rate of 4.0%. The lowest production level was recorded in 2019 at 553.2 thousand tonnes, which saw a decline of 2.1%.

Exports fresh cheese and curd from Russia

Russia's exports of fresh cheese and curd have increased for the third consecutive year. In 2021, export volumes amounted to 17.9 thousand tonnes, showing a strong rise of 11.2% compared to the previous year. From 2018 to 2021, exports grew by 43.1%, with an average annual growth rate of 12.7%.

From 2018 to 2021, Kazakhstan, Belarus, and Ukraine remained the top buyers of Russian fresh cheese and curd by volume. Kazakhstan accounted for 49.8% of exports, Belarus for 21.9%, and Ukraine for 10.2%. Together, these three countries made up 82.0% of total export volumes.

Russia's export value of fresh cheese and curd has risen for the third year in a row. In 2021, exports totaled 51.6 million US dollars, reflecting a significant increase of 24.8% from 2020. Over the 2018-2021 period, export value grew by 66.6%, with an average annual growth rate of 18.5%.

In terms of value from 2018 to 2021, Kazakhstan, Belarus, and Ukraine continued to be the main buyers of Russian fresh cheese and curd. Kazakhstan represented 52.9% of export value, Belarus 18.3%, and Ukraine 12.7%. Combined, they accounted for 83.9% of total export value.
