Earlier Report Observations

The dried eggs market in Latin America and the Caribbean started the period at 17 571 tonnes in 2018, supported by growing demand for convenient and long-lasting food products, as well as rising health and fitness awareness among consumers. Production increases in Argentina and Brazil, along with product differentiation in Mexico, contributed to market expansion. The following year, however, saw the market volume decline to 15 719 tonnes.

The COVID-19 pandemic in 2020 altered consumption patterns, boosting demand for ready-to-cook and shelf-stable items like dried eggs, which helped lift the market back to 17 472 tonnes. This trend continued into 2021, with urbanization and busy lifestyles driving further growth to 17 751 tonnes, aided by investments in processing technology across the region. The market then contracted to 17 132 tonnes in 2022 and stabilized at 16 907 tonnes in 2023. During this phase, the industry faced stricter food-safety and clean-label regulations, while avian flu outbreaks prompted a restructuring of layer flocks.

Throughout the period, consumer preferences shifted towards differentiated products such as organic and enriched dried eggs, particularly in Mexico and Brazil, reflecting a broader trend for health-oriented foods.
