The market for desiccated coconuts in Fiji showed significant volatility from 2018 to 2023, with overall volume growing from 99.6 metric tons to 141 metric tons. This upward trend was interrupted by a sharp decline in 2020, when the market contracted to 72.3 metric tons.

Following the 2020 low, the market recovered rapidly to 118 metric tons in 2021. After a period of stabilization around 118 metric tons in 2022, consumption increased again to reach 141 metric tons in 2023.

Domestic production followed a similar pattern, decreasing from 58.6 metric tons in 2018 to 46 metric tons in 2020 before rebounding strongly to 96.4 metric tons by 2023. This growth in local output supported the market's expansion in the latter part of the period.

The market showed an unstable trend throughout the period. Export volumes reached their lowest point in 2019 at 400 kg and peaked in 2020 at 1 107 kg, representing a 2.8-fold difference between these years. In 2020, Fiji's exports of desiccated coconuts surged by 177.1% compared to the previous year. The largest decline occurred in 2018, with a drop of 34.3%.
