Mexican coconut production declined from 1.1 million tons in 2018 to 1.07 million tons in 2021, with the market size contracting similarly. This occurred alongside rising demand for processed coconut products, such as coconut water, fueled by significant company investments and a shift in consumer preferences toward healthier options. However, summer droughts and drought stress in 2021 limited the growth of raw coconut output.

Production recovered to 1.12 million tons in 2022, supported by a strong expansion of exports, which reached 19 000 tons that year. Mexico's active efforts to commercialize coconuts internationally, including targeting new export markets, contributed to this uptick despite ongoing phytosanitary challenges like lethal yellowing disease. In 2023, output dipped to 1.09 million tons, while product innovation and the growth of e-commerce for coconut derivatives continued to shape the processed segment.

Export volumes continued their upward trajectory, reaching 23 000 tons in 2024 and 36 000 tons in 2025, bolstered by agreements between Mexican producers and major companies like Danone for coconut-based products such as yogurts. Regulatory support and government initiatives further aimed to enhance the competitiveness of Mexican coconuts in global trade.
