Concurrently, consumer trends shifted towards healthier foods and medicinal herbs, which could have increased demand for chicory as a dietary and medicinal ingredient.

Despite these supportive factors, chicory root production continued to edge downward, with the most notable drop of 2.2% occurring in 2022. By 2023, production stabilized just below 88 000 kg, indicating a smaller year-on-year change.
