Thailand's chicken meat and offal market volume grew by 20% in 2019 to 1.6 million tons, supported by the adoption of closed-house farming that improved disease control and meat quality. This period also saw expanded export opportunities to China after the restoration of export licenses and certification of processing plants by Chinese authorities.

The COVID-19 pandemic in 2020 led to a 17% contraction in market volume to 1.3 million tons, disrupting supply chains and demand. Recovery followed in 2021 and 2022, with the market growing by 7% and 3%, respectively, driven by the resurgence of the fried chicken segment, increased rearing of native chicken breeds, and a post-pandemic consumer shift toward chicken as an affordable protein source.

In 2023, domestic market volume declined by 6% to 1.4 million tons, even as production and exports rose. This shift reflected stronger overseas demand, particularly for processed and frozen chicken to markets like China and Saudi Arabia, alongside sustained substitution demand due to the African Swine Fever outbreak in pigs. Lower feed grain prices also helped reduce production costs during the year.

The lowest production level was recorded in 2018 at 1 615 K t, which also saw the largest decline of 2.7%.
