The market for beef, sheep, and goat fats in Costa Rica began the period at 4.8 thousand tons in 2018 and experienced significant volatility through 2021. A sharp increase to 7.1 thousand tons in 2019 was primarily due to a substantial drop in exports, while domestic production saw moderate growth. After a decline to 6.2 thousand tons in 2020, the market recovered to 6.7 thousand tons in 2021.

From 2022 onward, the market volume entered a phase of sustained growth, reaching 7.8 thousand tons in 2022 and 8.2 thousand tons in 2023. This expansion coincided with a gradual increase in national goat and sheep production and growing consumer interest in lamb and goat milk products, which supported underlying demand for animal fats. The sheep sector was further strengthened in 2023 by an alliance between the University of Costa Rica and the CoopeOvinos cooperative, which enhanced product quality and traceability. In 2024, the broader meat market in Costa Rica showed considerable growth, fueled by rising demand for organic and antibiotic-free meat, indirectly supporting the market for related animal fats.

After two consecutive years of growth, beef, sheep, and goat fat production in Costa Rica declined. In 2020, production remained stable at 8 187 tonnes compared to the previous year. Over the 2017-2020 period, production increased by 19.1%, with an average annual growth rate of 6.0%. The highest production level was recorded in 2019 at 8 195 tonnes, while the largest annual increase occurred in 2018 at 10.2%.
