From 2018 to 2024, the Spanish market for animal guts, bladders and stomachs showed significant volatility in volume. After rising to 228.2 thousand tonnes in 2019, it contracted sharply to 160.0 thousand tonnes in 2020. A strong recovery followed in 2021, lifting the market to 266.7 thousand tonnes, and it peaked at 288.9 thousand tonnes in 2022. The next year saw a drop to 166.6 thousand tonnes, before a partial rebound to 182.4 thousand tonnes in 2024.

The sector's expansion in 2022 was driven by broader domestic and foreign demand, with annual turnover reaching 227 million euros, supporting a market volume increase to 288.9 thousand tonnes.

In 2024, market volume grew despite China's anti-dumping investigation on EU pork imports, as Chinese purchases of Spanish guts, bladders and stomachs rose by 33.8%. New EU certification models and a Spanish royal decree on sheep and goat traceability also introduced updated documentation requirements for operators.

In 2020, Spain's production of animal guts, bladders, and stomachs was valued at 215.1 million US dollars, marking a slight increase of 2.2% compared to the previous year. Over the period from 2017 to 2020, production grew by 3.2%, which translates to an annualized rate of 1.1%. The most significant decline occurred in 2019, with a drop of 0.8%.

Spain's production of animal guts, bladders, and stomachs declined for the second consecutive year. In 2020, the country produced 202.7 thousand tonnes, representing a substantial reduction of 10.1% from 2019. The peak production was recorded in 2018 at 237.2 thousand tonnes, which also saw the largest increase of 17.8%.

Spain's exports of animal guts, bladders, and stomachs increased for the second consecutive year. In 2020, the country exported 75 625 tonnes, reflecting a strong rise of 23.8% from 2019. Between 2017 and 2020, exports grew by 9.9%, equating to an annualized rate of 3.2%. The lowest export volume was in 2018 at 58 033 tonnes, which also experienced the largest decline of 15.6%.

From 2017 to 2020, the export market for animal guts, bladders, and stomachs was diverse. China accounted for 18.0% of exports in kind, Hong Kong for 14.6%, and France for 13.0%, together making up 45.5% of total flows. The remaining 54.5% was distributed among numerous other countries.

In 2020, export value reached 240.2 million US dollars, showing a limited rise of 8.2% compared to 2019. Over the period from 2017 to 2020, exports grew by 32.3%, which corresponds to an annualized rate of 9.8%.

Between 2017 and 2020, China was the largest buyer of animal guts, bladders, and stomachs from Spain in value terms, accounting for 32.5% of exports, followed by Hong Kong at 8.1% and France at 7.6%. Together, these three countries represented 48.2% of total export value, with the rest shared among a wide range of smaller partners.

The highest import volume was in 2019 at 63 890 tonnes, which also saw the largest increase of 134.7%.
