Between 2018 and 2020, the volume of vinegar consumed in Romania declined from 30.9 million liters to 29.3 million liters. The COVID-19 pandemic in 2020 reduced demand and disrupted supply chains, accelerating the market contraction during that year.

A sharp recovery followed, with market volume jumping to 35.1 million liters in 2022. This expansion was supported by digitalization initiatives under the FACTORY 4.0 program, which modernized food industry operations and improved distribution. At the same time, steadily increasing energy and raw material costs pushed production expenses upward, raising market prices.

After the 2022 peak, volume receded to 30.0 million liters by 2024. Investments in agricultural technology aimed at boosting farm productivity influenced the supply side, while evolving consumer preferences linked to the housing market and broader economic conditions shaped demand dynamics in the later period.

Vinegar production in Romania declined for the second consecutive year. In 2020, output was valued at 10 149 K $ US, remaining virtually unchanged from the previous year. Between 2017 and 2020, production decreased by 2.7%, which equates to an annualized rate of 0.9%. The highest value was recorded in 2018 at 10 445 K $ US. The largest decline occurred in 2019, with a drop of 2.7%, while the largest increase was in 2018 at 0.1%.

Vinegar exports from Romania increased for the third consecutive year. In 2020, exports amounted to 971 K l, which is 16.9% higher than the previous year. Between 2017 and 2020, exports grew by 124.4%, representing an annualized rate of 30.9%.

From 2017 to 2020, the United Kingdom, Bulgaria, and Italy were the leading destinations for Romania's vinegar exports in kind. The United Kingdom accounted for 41.8% of exports, Bulgaria for 26.2%, and Italy for 8.3%. Together, these three countries represented 76.3% of total export flows.

Cross-border shipments of vinegar from Romania increased for the third consecutive year. In 2020, Romania exported 446 K $ US of vinegar, showing a gain of 23.6% compared to the previous year. Between 2017 and 2020, exports increased by 96.4%, equating to an annualized rate of 25.2%.
