Bulgaria's market for vegetables, pulses and potatoes in vinegar began the period with a volume of 5 023 t in 2018. At that time, Bulgarian legumes, greenhouse tomatoes and cucumbers, and potatoes held relatively strong competitive positions on foreign markets, which supported export volumes. By 2020, domestic sales of processed and canned vegetables fell by 7%, leading to a slight contraction in the market to 6 673 t.

From 2021 onward, the market entered a phase of rapid expansion, reaching 10 411 t that year and climbing to 13 702 t by 2023. This sustained growth was driven by a sharp increase in imports, which more than doubled from 2020 levels, while exports gradually declined over the same period.

In 2020, the country exported 6 130 tonnes, reflecting a small rise of 2.7% compared to the previous year. From 2017 to 2020, exports grew by 7.3%, equating to an annualized rate of 2.4%. The lowest export volume was in 2018 at 5 598 tonnes, which saw the largest decline of 2.0%. In contrast, the largest increase occurred in 2019 with a 6.6% rise.
