The German uncooked egg pasta market expanded from 188.2 thousand metric tons in 2018 to 201.6 thousand metric tons in 2020. This growth was supported by the entry of the SUNTAT group with a new brand emphasizing sustainable production, along with manufacturers investing in expanded and modernized facilities to meet market demand.

After peaking in 2020, the market contracted to 185.6 thousand metric tons by 2022, with production also declining gradually over these two years.

A sharp downturn occurred in 2023, as market volume fell to 167.3 thousand metric tons and production dropped by 16.9%. This was driven by a structural shift in consumer preferences toward vegan and plant-based foods, leading egg-free pasta production to surpass egg pasta for the first time in Germany. The trend continued into 2024, with the market declining further to 163.5 thousand metric tons, reinforced by sustained demand for egg-free alternatives and rising pasta imports from Italy.

Over the period from 2017 to 2020, production grew by 9%, with a compound annual growth rate of 2.9%. The lowest value was recorded in 2019 at 331.8 million US dollars, which also saw the largest decline of 4.3% during this timeframe.

Germany's production of uncooked egg pasta increased for the second consecutive year. In 2020, the country produced 194.9 thousand tonnes, showing a measured rise of 6.4% compared to 2019. Between 2017 and 2020, production grew by 5%, equating to an annualized rate of 1.6%. The lowest output was recorded in 2018 at 180.4 thousand tonnes, which also experienced the largest decline of 2.8%.

The highest value was recorded in 2018 at 50 279 thousand US dollars, which also saw the largest increase of 10.6%. In contrast, the largest decline occurred in 2019, at 9.0%.
