Between 2018 and 2020, the UK turkey meat market volume grew from 173 thousand tonnes to 184 thousand tonnes in 2019 before easing to 182 thousand tonnes in 2020. In value terms, the market remained relatively stable, reaching $354 million in 2019, then declining to $294 million in 2020.

A sharp contraction occurred in 2021, with market volume dropping to 138 thousand tonnes and value falling to $243 million. The following year, while volume slipped further to 133 thousand tonnes, market value rebounded to $313 million. This was partly driven by shifting consumer preferences toward healthier lean protein and a 15% rise in ready-to-eat turkey products, which carry higher unit values. Labeling rules for frozen and defrosted poultry and Food Standards Agency guidance also influenced retail and production practices.

In 2023, market volume recovered to 136 thousand tonnes and value increased to $326 million. Continued demand for fresh and processed turkey, alongside a significant drop in exports that boosted domestic availability, supported the market. Processed convenience items and steady offal exports helped maintain carcass balance and value.
