From 2018 to 2021, sugar cane production in Nicaragua experienced a downward trend. After starting at 7 315 thousand tonnes in 2018, output fell to 7 043 thousand tonnes in 2019, largely due to adverse climate conditions affecting crop yields. Production stabilized around 6 993 thousand tonnes in 2020, then declined further to 6 830 thousand tonnes in 2021 as millers faced difficulties with late cane development, delaying the harvest.

The market rebounded in 2022, with production jumping to 7 351 thousand tonnes – near historical highs – driven by improved milling productivity and investments in efficient operations. However, output dropped back to 6 965 thousand tonnes in 2023. During this period, the industry adapted to the loss of the U.S. sugar quota, partially offset by new access to the Chinese market under a free trade agreement. The acquisition of the Monte Rosa mill by the Pantaleon Group also marked a significant consolidation, making it the country's second-largest producer.
