The starch market in Hong Kong displayed considerable volatility in physical volume between 2018 and 2023. Starting at 48 293 tonnes, the market size contracted sharply over the following two years, falling to 34 839 tonnes by 2020.

A recovery pushed volume to 40 790 tonnes in 2021, but this was followed by another decline to 34 940 tonnes in 2022. The market expanded again in 2023, reaching 41 027 tonnes, which remained below the initial 2018 level.

In monetary terms, the market's value followed a similarly turbulent path. The 2023 market value rose to $38.2 million, marking a significant increase from the $27.6 million recorded in the previous year.
