This decline occurred alongside European regulatory changes on labeling and traceability that affected product formulations and market access. Despite the volume decrease, the market saw increased variety with premium and health-focused options, entry of new players, and significant activity from major companies like Kikkoman launching targeted campaigns and products. Online sales of soya sauce grew by 34% in regions with high adoption of Asian cuisine.

By 2024, trends continued towards clean-label products without preservatives, organic ingredients, and convenient formats. Regulatory emphasis on sodium reduction began shaping product development, while artisanal and local production maintained a niche, supporting market differentiation through prolonged fermentation and unique flavors.

In 2020, Europe produced 103 987 tonnes of soy sauce, representing a slight improvement of 1.5% compared to the previous year. Between 2017 and 2020, production grew by 49%, which translates to an annualized growth rate of 14.2%.

Exports soya sauce from Europe

Exports reached their peak in 2018 at 82.8 thousand tonnes and fell to their lowest point in 2019 at 20.9 thousand tonnes, representing a fourfold difference between these years. From 2017 to 2020, the United States (accounting for 2.8% of exports in volume), Switzerland (1.6%), and Norway (1.6%) played leading roles in Europe's soy sauce exports by volume. Together, these three countries represented 5.9% of total export flows.

Over the 2017–2020 period, China (representing 25.7% of imports in volume), Japan (8.8%), and Thailand (3.3%) were the largest suppliers of soy sauce to Europe, though they did not dominate the market.
