In response, the market saw a partial recovery to 196.6 thousand tons as major manufacturers secured raw materials through long-term contracts and a focus on local mustard varieties gained traction to ensure supply security.

Market volume rebounded significantly to 231.1 thousand tons in 2023, nearing pre-disruption levels. This recovery coincided with strong product diversification and a rising consumer demand for sustainable and organic mustard, with the latter seeing a 56% increase in demand since 2020. By 2024, the launch of over 380 new mustard-based products globally and the opening of flagship mustard boutiques in Europe indicated continued innovation and direct consumer engagement in the sector.

Looking at the period from 2017 to 2020, production dropped by 3.1%, which translates to an average annual decline of 1.0%. The highest production level was recorded in 2018 at 249 040 tonnes, with that year also seeing the largest increase of 4.8%.

In contrast, the value of mustard powder and prepared mustard production in Europe rose for the second consecutive year. In 2020, production was valued at 1 562 million US dollars, representing a 2.8% increase compared to 2019. Over the 2017-2020 period, the value grew by 3.9%, averaging 1.3% per year. The lowest value was recorded in 2018 at 1 362 million US dollars, which also saw the largest decline of 9.5%. The most significant increase occurred in 2019, with an 11.6% rise.
