In response, the market saw a partial recovery to 196.6 thousand tons as major manufacturers secured raw materials through long-term contracts and a focus on local mustard varieties gained traction to ensure supply security.

Market volume rebounded significantly to 231.1 thousand tons in 2023, nearing pre-disruption levels. This recovery coincided with strong product diversification and a rising consumer demand for sustainable and organic mustard, with the latter seeing a 56% increase in demand since 2020. By 2024, the launch of over 380 new mustard-based products globally and the opening of flagship mustard boutiques in Europe indicated continued innovation and direct consumer engagement in the sector.
