By 2024, structural and climatic factors were pressuring supply. In Germany, a leading producer, the planted area for sour cherries had shrunk by 29.3% since 2014. The 2024 harvest was projected to be the smallest in a decade due to this long-term decline and acute weather events like late frosts and regional rains, which damaged yields and quality.

Consumer demand for fresh sour cherries remains seasonal and niche, sustained by a dedicated base for traditional uses like cakes and jams, though preference leans toward sweet cherries for fresh eating. These supply constraints and stable demand patterns have contributed to firmer market prices.
