In 2019, the market volume of sausages and similar meat products in Slovakia fell by 10% to 84 thousand tonnes as over a third of households began purchasing plant-based alternatives, reducing meat consumption. The market recovered to 92 thousand tonnes in 2020, though the shift toward plant-based products continued to exert pressure.

The largest producer, Mecom Group, responded by expanding its fresh meat production capacity and implementing technological upgrades in 2021, which helped stabilize the market volume around 93 thousand tonnes. However, volume declined in 2022 and 2023, dropping sharply to 75 thousand tonnes in 2023, coinciding with eased global supply chain pressures that lowered processing costs.

Market volume rebounded by 23% to 92 thousand tonnes in 2024 as the industry focused on product reformulation and promoting high-quality meats like Carpathian pasture-raised beef to attract health- and environmentally-conscious consumers.

In 2020, Slovakia produced 82 012 tonnes of sausages and similar meat products, representing a 2.1% increase from the previous year. Between 2017 and 2020, overall production decreased by 3.4%, averaging an annual decline of 1.1%. The lowest production level was recorded in 2019 at 80 341 tonnes, while the peak was in 2018 with 86 154 tonnes. The most significant drop occurred in 2019, when production fell by 6.7%.

The highest export volume was recorded in 2019 at 32 209 tonnes, which also saw the largest annual increase of 17.8%.

From 2017 to 2020, Hungary was the primary destination for Slovakia's exports of sausages and similar meat products in volume terms, accounting for 82.6% of total exports. The remaining share was distributed among several smaller markets.
